Pimento Cheese....Again


I'm still kicking myself in the rear for snubbing pimento cheese all my life. (I have really flexible knees or that wouldn't be possible)  But I'm doing my best to make up for it.  What's not to love about pimento (or pimiento, if you prefer) cheese?   


It was love at first chomp.


For the life of me I'm not really sure what recipe I used but it was very similar to this one at AllRecipes

Ingredients

  • 1 (8 ounce) package cream cheese, softened
  • 2 cups shredded extra-sharp Cheddar cheese
  • 1/3 cup mayonnaise
  • 1 pinch garlic powder
  • 1 (4 ounce) jar diced pimentos, drained

Directions

Beat the cream cheese at medium speed with an electric mixer until creamy; add Cheddar cheese and continue beating until light and fluffy. Beat in mayonnaise and garlic powder; stir in pimento. Cover and chill for at least 1 hour. (Well, I didn't use a blender, and didn't add the garlic powder, but otherwise it's pretty close)

Looking at that snow makes me cold. The pimento cheese looks and sounds fabulous.

Can't believe I still haven't tried Pimento Cheese. What is my problem anyway?! Looks terrific!

I was just thinking about pimento cheese the other day! My problem is once I make it, I eat the whole thing...

I haven't had pimento cheese in years but a good recipe of it is hard to beat.

Pimiento cheese rocks, but only when home made, I can't stand that orange goop that some places sell. That is probably why you avoided if for so long!

I've never had this either. Somehow it just never appealed to me, but today you make it sound good! I might have to give it a try :) Heard they got lots of snow in Flagstaff. It's nice to be able to go up to the snow and then go back home where there isn't any!
