Baked Polenta with Prosciutto

I'd never had polenta, but I saw this recipe at Cinnamon, Spice and Everything Nice, and really wanted to give it a try. It looked like comfort food to the max, full of cheesy, ooey goodness.
As usual I was incapable of following directions completely. The recipe called for parmesan and fontina, and I used romano (cause I had some) and havarti (cause I couldn't find fontina).
It was very easy to put together, and I love the part where the sage leaves get sauteed. I love the texture on these little guys.
The finished product....
Three out of four family members approved. The fourth one just doesn't know what's good.
I can see this being very versatile...adding whatever makes you happy that particular day.
I'd like to say this reminded me of my Italian grandmother, but I didn't know either of my grandmothers, and they'd probably have served grits rather than polenta.

  1. This dish looks delicious! I don't usually follow directions either - I go with what I know will be good and with what I have on hand. I usually have very good luck - like you did. I love polenta and the Romanian version, mamaliga.

It looks really yumza - seriously, it looks good!! Maybe I should try making it since my husband is apparently an Italian. (yes, he is, but he doesn't act like one)

  7. Looks yummy. Kind of like a fancy version of the spoon bread that gets served here. Only spoon bread is a little more set-up.

  16. Never had polenta, I even haven't heard this name, I have no idea what it is. But this dish seems absolutely delicious. And I love the idea of sauting sage leaves for a dish. we just make its tea here in Turkey.
