Berry and Yogurt Phyllo Nests (and a magazine giveaway)

Greetings all...I trust you had a restful Mother's Day weekend.  I spent my day baking like a fool, and watching the Suns sweep the Spurs..oh yeah! (If you're a Spurs fan, I apologize for that little outburst.)

I actually made this cute little dessert a few nights ago.  I think the whole family liked them (no berries for the girl, though!) and they were pretty simple.  I especially loved the yogurt filling.  


The directions for making the cups in the recipe sounded a little more complicated than it needs to be.  Basically, you layer 2 sheets of phyllo, spraying butter flavored spray between the sheets, and cut them into squares (approx 4-5 inches). Then layer 3 of these squares and push them down into a muffin cup to make a nest.  Make sense?  I hope so.  

Ingredients:
butter flavor cooking spray
6 sheets phyllo dough (14x9inches)
2 1/2 tsp sugar, divided
1/3 cup vanilla yogurt
1 tsp grated orange peel
1 tsp orange juice
1/2 cup fresh strawberries, halved
1/2 cup fresh raspberries,
1/2 cup fresh blueberries

Directions:
1.  Place the layered squares of phyllo dough (as explained above)  in each of six muffin cups coated with cooking spray.  Sprinkle 1/4 tsp sugar into each cup.  Spritz with cooking spray.  Bake at 375 for 6-8 minutes or until golden brown.  Cool.

2.  In small bowl, whisk the yogurt, orange peel and juice, and remaining sugar.  Spoon yogurt mixture into cups.  Top with berries  (I couldn't find the combo of fresh berries the recipe called for, so I used some frozen ones.)

3.  Top with whippy cream of your choice.


Nutrition info (without whipped cream):  calories 72, fat 1gm, fiber 2gm.

    I try to stay positive by just looking for the positive in things. Easier said than done, but a positive attitude goes a long way. :)

    Staying positive - I just try and always think "there are many out there that don't have nearly what I have, and are struggling...puts it all in perspective!"

  5. I love the yogurt cups. I bet they are crunchy, sweet and creamy - yum!

    I would love the magazines, I need to cook light more often;D

    I think cooking helps me to stay positive and also my part time job, even if I only work one or two days a week. It's nice to be around women my own age and get a break from the kids.

    i just try to count my blessings. i think of what my life would be life if i didn't have all the things i do, and it makes me much slower to complain.

    I just try to remind myself not to worry about the little things and enjoy (I'm referring to my kids here) them for who they are and remembering that they are kids.

    I'm lucky. My personality is just naturally optimistic and positive. I don't take credit. There was no transformation. I'm just a silver lining kind of girl by nature. Sure, bad things happen to me and I have my bad days, but when I look around at all of the hardships that some people must endure, from terminally sick children to job loss to dealing with natural disasters and destruction, my heart breaks for them and then I count my blessings. Plus, my grandpa always said that 98% of the stuff we worry about never happens and the stuff that does happen to us, isn't usually anything we could foresee to begin with. When I look at it that way, it seems a waste of time to worry. I guess that I've adopted his philosophy, because I'm not much of a worrier. As a result, I'm more positive. Did I mention that my grandpa is a motivational speaker on education and...the power of a positive attitude? lol. True story. : )

    as far as maintaining a positive attitude, well, whenever i feel my mood darkening, i reach for something tasty. :)

  19. Yum. This looks like a perfect little treat or maybe a good brunch item.

    To keep a positive outlook I try to remember to take time for myself. Taking a few hours every once and a while to hang at a coffee shop, browse leisurely through stores or read helps me stay positive.

  23. The desserts are so cute! And yummy! Love how low in calories they are. My Mom just discovered these magazines - she loves them. A positive attitude? Every time I find myself thinking negatively I stop myself and replace it with a positive affirmation. I hardly ever have negative thoughts now - it has become a habit.

    How do I maintain a positive attitude? I'm generally a positive person until i get ticked and then I just complainprofusely to my husband til I'm done :-)
