As I mentioned before, I love roasted red peppers, and this dish gave me a good opportunity to use them. I added some chopped artichoke hearts during the sauteing step because I love those too.
Reviews were as follows:
Mom-loved it
Dad-ate it without complaint
Picky-ass children-snarled at it.

Oh my! This looks every bit as good as Tiffany's version. And I love artichoke hearts! Like your kids, my picky-ass husband (who doesn't know what's good) will be sure to snarl at this, so I'll make it for myself and send him to McDonald's. Thanks!
I am going to steal-- I mean get inspired from your dish here!! It looks awesome. I LOVE it!! So many good flavors going on in here!
Pass me a plate! Oink~~Oink!

I wouldn't snarl at that if you fixed me that for dinner. That looks fabulous.
That has to be delicious...especially with the artichoke hearts!
You know you've made something tasty when you have the young ones snarling! LOL

I have to admit that your children's review cracks me up. I think this is something I would enjoy (minus the artichoke hearts) :)

Thank you for the welcome! I am sure you are good at improvising when cooking. It just takes awhile to get comfortable with it!
