Yummy Nachos

Got a sad and lonely piece of delicious brisket left from Christmas dinner. What's a girl to do?
Chop it up and throw it in a skillet with a little help from a couple of items from the pantry. (I also tossed in a little taco seasoning, it seemed to need a something more.)
I made mine in a double layer in a small skillet with the beans, some chopped onion, some of that Paul Newman salsa I got the other day, and a colby/monterey jack combo. I put some tapatio in the hubby's nachos. Threw it in the oven at about 375 till the cheese got melty and bubbly. Then as the French say, Viola! Dinner is served!
Speaking of stupid, here's a pic of me in the apron the hubby had made for me for Christmas with images from my blog.
I had to cut my arms off to try to crop off most of my messy kitchen. The Venus de Milo's got nothing on me.
P.S. I got a nice waffle maker for Christmas, but my first try wasn't exactly successful. They turned out just kinda chewy. I used the waffle recipe that came with the package, maybe it's not a great recipe? It has an indicator light that tells you when it's hot enough, so I don't think that was the problem. Any clues? Thanks!

Those nachos look delightful!!! YUM!! And I think you look great in the apron. I got my DH a waffle maker for christmas and we had the same problem. They were kinda soggy when the indicator light turned green. So...we left the next batch in the maker for a few minutes after the light turned green and they were greatly improved. I guess we shouldn't trust the green light! LOL!

I love the apron. Did your hubby use pics from your blog? That is a very cute idea! I'm getting a kick out of the jalapinto beans :D I've never seen those before, but I'm sure I would like them. Nachos are one of my very favorites! I can always devour them. Yours look delicious :D

Good idea about the nachos. I never think to make them because my nachos always seem so 'wilted' to me. After all the sweets, savory is a welcomed guest in our house.

I received a new waffle iron for Christmas as well; it's a Proctor Silex, and it seemed to work well. I used the basic recipe, which I felt came out very very light and very crispy. My old waffle iron finally konked out after 20 some years!

The only thing I can think of is that perhaps you didn't let them cook enough? Or if it was chewy, perhaps it's just not the perfect recipe for you?

Nice! I used our leftover pulled pork to make Josh nachos last night!! Hmmm....I'd just try finding another recipe online and give the waffle maker another whirl- they're so much fun!!

you'll master that waffle maker, cuz you are the kitchen master! ever mastered aebelskeiver? danish pancakes, i have a pan and have yet to 1 find the right recipe and 2 master the technique of the pan..

With new waffle irons the first 2 batches usually don't turn out well. I think the iron just needs to be broken in a bit but about the 3rd batch the iron is seasoned and from then on no more problems.

Nachos are always welcome around here. Yum! Maybe try a buttermilk recipe for your waffles? I use a Southern Living one aqnd they always come out great in my 15 year old waffle maker...LOL!

i'd stare at the brisket and then cry, but a GOOD cook would know what to do with a tired, ol' brisket....YOU knew and it looks FABulously yummy.

Yes, that brisket needed a good home and I think he found it! I made nachos the other day with leftover filet mignon and it was delicious!

As for the waffles, it may have been the recipe. Try a new one.

I don't know about the waffles. Sorry. My one twin has said how much he'd like me to get a waffle maker. LOL, um wonder why. He even said it would make life easier 'cause then we wouldn't have to make pancakes every Sunday. He's so thoughtful. NOT! :)I'll have to check back in a with you to see how you like yours.
