I was in a cheese soup mood last night and found this recipe at a fun little site called All Things Cheese, posted by Mr. Cheese (who is somebody I might like to get to know a little better).
Although the ingenious addition of bacon....that was all me, baby.
Below is the recipe and a few adjustments I made.
1 cup diced onions
1 cup diced celery (didn't use)
1 cup diced carrots (I shredded mine)
1 cup diced mushrooms (didn't use)
3/4 cup butter
1/2 cup flour
1 tsp dry mustard
5 cups chicken or vegetable stock
12 fl oz beer
6 oz cheddar cheese, grated
2 tablespoons grated Parmesan cheese
pepper to taste
1/2 package cooked bacon, crumbled
Saute your diced vegetables in butter. Then mix your flour and mustard in with your vegetables. Next, add your chicken or vegetable stock to the mixture and cook for five minutes. Finally, add beer and cheeses (and bacon!) to the soup and let simmer for 10-15 minutes. To enhance the experience, serve in a bread bowl!
I also added some tabasco and Worcestershire sauce for more flavor.
This was a bit thinner than most cheese soups, but I kinda liked it that way.
So, about this whole Halloween thing...
I'm just not feeling it. It seems like every year it's just not quite what it's cracked up to be. In fact last year my daughter wrote me a nice little letter letting me know what a let down it was.
So I told her this year we could just stay home and pass out candy, so that's what we're doing.
I wish it could be a nice neighborhood Norman Rockwell experience, but it's just not.
But, if I was dressing up, this is what I would be wearing.

hmmmm love cheese soups, especially this time o year. i am dressing up, but as what? i dont know, thats my goal this week to figure that out!
That soup looks tasty. Three of my favorite things in one lovely edible bowl. MMM.
I think for halloween this year I'm going to dress up as Flo, the Progressive auto insurance gal. :)
OMG cracking up at Lauren's costume idea. My husband would freak out if I did that. He always says "She's hot in a weird way." hahahaha
Halloween is still a 'fun' day since I have a 6 year old daughter who adores dressing up. And it's fun for me since I get to pick out my son's costumes. Last time I dressed up my daughter was 1 or 2. She was a giraffe, I was the 'zookeeper.' :)
I'm doing a project for school..was hoping you and your bloggy friends would stop on over and post a comment on my Challenge Yourself post I made today. http://mya922.blogspot.com/
Thanks
Have a good week.
sometimes i love halloween and sometimes i don't. i'm having a hard time getting into it this year too. i love your costume idea though. the soup looks wonderful!
Ohhh I love the beer cheese soup! So comforting
Oh! The soup looks great, better in the bread...yummie!
She wrote you a letter? Aww! I would have cried!
There is nothing better than soup in a big bread bowl with bacon and cheese in it.
Soup looks very good.
Yes, treat me like I'm the Queen and all is well.

That soup looks great - you can't go wrong with those 3 ingredients in the title!
What a gorgeous presentation .. I like my cheese soups on the thinner side also. This sounds perfect to me!!
This soup has 'man' written all over it! My husband would love this.
A letter of disappointment? how sad is that?! Maybe you could decorate a gingerbread halloween haunted house or make caramel apples or decorate creepy cupcakes instead of going out. That should fill up the evening as you pass out candy, huh?
Oh my! Look at that beautiful presentation! The soup sounds delicious, comforting and filling. Such eye appeal!
What a delicious soup - I love your presentation.
I made beer cheese soup in a bread bowl last year. It was so good, but I'd completely forgotten about it until I read your post. It's time to visit that one again! This looks delicious!
Have fun staying in this year. My daughter absolutely loves to pass out candy. She even walks outside and tried to direct trick or treaters in, "This way! Hey! Over here! We've got cannnndy!" lol
I would like to fina a guy named Mr. Cheese....ha-ha and this soup my friend...heaven.
my boyfriend is gonna love this! beer, cheese and bacon... his three favorite things!
-Mini :)
The soup looks wonderful!!!
I don't usually dress up for Halloween. My kids haven't trick or treated for a few years now, which makes Halloween quiet.
Have a great day.
Sandra
Thanks for entering my giveaway on Sweet Basil, and this soup looks awesome!! I'll keep checking back to see what else you make
Ow, I'm sorry your babygirl didn't enjoy Halloween. Mine love it (now) but we live in a HUGE neighborhood and many of the homes are spookily decorated.

Your soup in the bread bowls simply rocks!
I would have melted if mine would write me a letter! Love the costume.
Love the costume idea and the sentiment!
I'm making this soup!
Hello! Mr. Cheese here. I'm glad you enjoyed the Beer Cheese (and Bacon) soup. It's one of my favorites. I'll have to add bacon the next time I make this.
Love your website!
